1Cook the soba noodles according to package directions (mine called for boiling for 4 minutes).

2Drain noodles and rinse well with cold water, until noodles feel cool to the touch.

3Drain well again, set aside in a large bowl while preparing the rest of the dish.In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, chile-garlic paste, garlic and ginger. To the bowl with the noodles add the carrot, green onion, cilantro and sesame seeds.
